Comments: Meats with freezer burn and frost build-up . Discard unsafe food. Wrap all meats properly to protect foods.
*** Hot Holding
Comments: Cooked turkey left under steam table in covered pot 76F chicken legs 94F. Discard out of temperature product. All hot food must be maintained at 140F or above.
*** Cold Holding
Comments: Two door refrigeration unit slice cheese 49F goat 49F meatball 49F. All cold food must be maintained at 41For below Discard all foods out of temperature.
* PHF’s Properly Thawed
Comments: Trash bag filled with meat thawing in soiled container on floor in basement. Container with beef thawing not cover in basement. Exposed to filth, dust and soils.
* Food Protection
Comments: Bag of carrots , onions and pots with food on floor . Remove. Store all food properly six inches above ground. Multiple trash bags of foods stored in freezers. Remove and store in food grade container.
*** Adequate Handwashing/Where/When/How
Comments: Observed no handwashing during the inspection . PIC must trained staff in handwashing.
* Clean Cloths, Hair Restraint
Comments: No aprons staff clothes soiled. Provide aprons.
* Non-Food Contact Surfaces
Comments: Two door refrigerature unit 56F . Repair or replace.
* Pre-Flushed, Scrapped, Soaked
Comments: Soiled pots and pans piled high in both 3 compartment sinks. Remove and clean properly.
* Non-Food Contact Surfaces Clean
Comments: All freezer with soils frost build-up and odorous smell. Clean and sanitize all freezer.
* Non-Food Contact Surfaces Clean
Comments: Soils and dried spills in refrigeration units in basement and kitchen area. Clean to remove all soils.

Comments: Pipe under 3 compartment sink in basement being held up with jack. Repair

Comments: Handsink in kitchen with grease build-up . Discontinue use of sink for other than handwashing. Hand sink in basement blocked with pots and pans in sink. Remove Handsink are for hand washing only.
* Hand Cleaner, Drying, Tissue, Signage
Comments: No soap or paper towel at any of the handsinks. Provide
* Improper Maintenance of Floors
Comments: Soils and food debris on floor throughtout kitchen area. Clean to remove.
* Improper Maintenance of Walls/Ceilings
Comments: Hood sticker expired August 2015. Call from service and provide current sticker.

Comments: Person in charge not monitoring staff, food temperatures or proper food handling practices.
